I love fried-rice. Warm and comforting. Perfect as a main dish and perfectly acceptable as a side dish (but really, why would you bother eating this with anything else).
Recently, I've been experimenting with different versions of Thai Fried Rice . Here is my new favourite recipe. Give it a try. It's delicious.
These ingredients are all vegan versions, but you can substitute for the real thing if needed.
Ingredients

7 garlic cloves, roughly chopped
1 cup Thai basil leaves
Red Chilli (any variety and quantity that you like)
½ cup vegan oyster sauce
2 tbsp soy sauce
2 tbsp vegan fish sauce
1½ tsp white sugar
2 onions, chopped
3-4 cups cooked long-grain rice (best if cooked the day before)
½ cup cashews
Method
Use a mortar and pestle to pound chilli and garlic. Put to the side
Combine oyster sauce, fish sauce and sugar in a small bowl. This is your stir-fry sauce. Put to the side.
Heat a wok or fry pan on high, add 1tbsp of vegetable oil (or whatever oil you have on hand).
When oil is hot, add chilli and garlic paste.
Immediately add onion. Stir-fry for 2-3 minutes until onions are soft.
Add rice and stirfry for another 2-3 minutes.
Add stirfry sauce, Thai basil leaves and the cashews.
Serve with a wedge of lime (optional).
