My favourite Banana Bread

So simple and using pantry staples, this banana bread is the perfect Sunday morning (and Sunday evening treat.
Ingredients:
4 medium ripe bananas
¼ cup vegetable oil
¼ cup almond milk
½ cup light brown sugar
2 tsp pure vanilla extract
2 cup unbleached all-purpose flour
1 tsp cinnamon
1 tsp baking soda
½ tsp salt
sliced bananas, for topping
Method:
1. Preheat the oven to 180°C. Spray a 9×5 loaf pan with nonstick spray, then flour.
2. In a mixing bowl, mash the bananas. Add the brown sugar, oil, vanilla, and almond milk. Mix until everything is just-combined. Best never to over-mix this batter!
3. Sift (if you can be bothered - I just add) in the flour, baking soda, salt, and cinnamon, and mix.
4. Place in loaf pan, and top with the extra banana slices.
5. Bake for about 45 minutes.
